Healthy Recipe Spotlight: Artichoke and Sun-Dried Tomato Chicken

This one-pan dish is quick to prepare, making it a great option for busy weeknights or meal prep.

Artichoke and Sun-Dried Tomato Chicken

Ingredients:

  • 4 boneless, skinless chicken breast halves
  • Salt and pepper to taste
  • 2 tsp olive oil
  • 1 can (14.5 oz) diced tomatoes with green peppers and onions
  • ¼ cup sun-dried tomato pesto
  • 1 can (14 oz) artichoke hearts (in water), drained and quartered

Directions:

 

  1. Season & Sear:

Lightly season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear chicken for 2–3 minutes per side until browned. Remove from the skillet and set aside.

2. Simmer Sauce:

Add the diced tomatoes to the skillet. Stir for about 1 minute, scraping up any browned bits from the pan to enhance flavour.

3. Add Flavour & Finish:

Stir in the sun-dried tomato pesto and artichoke hearts. Return the chicken to the pan. Cover and simmer over medium heat for 10–12 minutes, or until chicken is fully cooked (internal temp of 165°F/74°C).

 

Serving Suggestions:

 

Serve with a side of quinoa, whole grain couscous, or steamed vegetables for a balanced, nutrient-rich meal. For added fiber, try mixing in cooked lentils or serving over a bed of greens.

Tip: Looking to reduce sodium? Use low-sodium canned tomatoes and rinse the artichokes before cooking
